These classic French madeleines are light, buttery, and delicately flavored with vanilla and lemon. With their signature shell shape and soft, cake-like texture, they make a perfect treat for tea time or a light dessert

- ½ cup (1 stick) unsalted butter, melted and cooled
- 2 large eggs, at room temperature
- ⅔ cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp lemon zest (optional)
- 1 cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 2 tbsp milk
- Powdered sugar, for dusting
Instructions
Prepare the Batter:
- In a mixing bowl, beat eggs and sugar together with a hand mixer or stand mixer for 3-4 minutes until pale and fluffy.
- Stir in vanilla extract and lemon zest.
2️⃣ Combine Dry Ingredients:
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gently fold the dry ingredients into the egg mixture until just combined.
3️⃣ Add Butter & Milk:
- Gradually mix in melted butter and milk until fully incorporated.
- Cover the batter and refrigerate for 30 minutes (this helps create the signature madeleine hump).
4️⃣ Preheat & Prep:
- Preheat oven to 375°F (190°C).
- Grease a madeleine pan with butter and lightly flour it.
5️⃣ Bake the Madeleines:
- Spoon 1 tablespoon of batter into each mold, filling about ¾ full.
- Bake for 10-12 minutes, or until the edges are golden and the tops spring back when touched.
6️⃣ Cool & Serve:
- Let the madeleines cool in the pan for 5 minutes, then transfer to a wire rack.
- Dust with powdered sugar and enjoy!
Notes
- Chilling the batter is key to achieving the classic “hump” on madeleines. Don’t skip this step!
- If you don’t have a madeleine pan, you can use a mini muffin pan, but they won’t have the signature shell shape.
