Description

These classic French madeleines are light, buttery, and delicately flavored with vanilla and lemon. With their signature shell shape and soft, cake-like texture, they make a perfect treat for tea time or a light dessert


Ingredients

  • ½ cup (1 stick) unsalted butter, melted and cooled
  • 2 large eggs, at room temperature
  • ⅔ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (optional)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp milk
  • Powdered sugar, for dusting

Instructions

Prepare the Batter:

  • In a mixing bowl, beat eggs and sugar together with a hand mixer or stand mixer for 3-4 minutes until pale and fluffy.
  • Stir in vanilla extract and lemon zest.

2️⃣ Combine Dry Ingredients:

  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gently fold the dry ingredients into the egg mixture until just combined.

3️⃣ Add Butter & Milk:

  • Gradually mix in melted butter and milk until fully incorporated.
  • Cover the batter and refrigerate for 30 minutes (this helps create the signature madeleine hump).

4️⃣ Preheat & Prep:

  • Preheat oven to 375°F (190°C).
  • Grease a madeleine pan with butter and lightly flour it.

5️⃣ Bake the Madeleines:

  • Spoon 1 tablespoon of batter into each mold, filling about ¾ full.
  • Bake for 10-12 minutes, or until the edges are golden and the tops spring back when touched.

6️⃣ Cool & Serve:

  • Let the madeleines cool in the pan for 5 minutes, then transfer to a wire rack.
  • Dust with powdered sugar and enjoy!

Notes

  • Chilling the batter is key to achieving the classic “hump” on madeleines. Don’t skip this step!
  • If you don’t have a madeleine pan, you can use a mini muffin pan, but they won’t have the signature shell shape.
  • Dip in melted chocolate for an extra indulgent treat! 🍫✨
  • Store in an airtight container at room temperature for up to 3 days or freeze for longer storage.
