  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1½ tsp black pepper
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp ground cumin
  • 1 tsp chili flakes (optional)
  • ½ cup beef broth
  • 2 tbsp apple cider vinegar

Optional Sweet Glaze:

  • ¼ cup honey or brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce

Instructions

  1. Prepare the Beef Belly:
    Preheat your oven to 300°F (150°C). Pat the beef belly dry with paper towels. Score the skin in a crosshatch pattern for maximum crispiness.
  2. Season:
    Mix salt, pepper, paprika, garlic powder, onion powder, cumin, and chili flakes. Rub olive oil over the beef belly, then coat evenly with the seasoning mix.
  3. Slow Roast:
    Place the beef belly on a roasting rack in a pan. Pour beef broth and apple cider vinegar into the bottom of the pan to create steam. Cover tightly with foil and roast for 3½ hours.
  4. Crisp the Skin: 🔥
    Remove the foil and increase the oven temperature to 450°F (230°C). Roast uncovered for 30–40 minutes until the skin becomes golden brown and crispy.
  5. Glaze (Optional):
    Mix honey, soy sauce, mustard, and Worcestershire sauce. Brush over the beef belly during the last 10 minutes of roasting for a sweet-savory finish.
  6. Rest and Slice:
    Let the beef belly rest for 15 minutes before slicing. Cut into thick slices or cubes.
  7. Serve:
    Pair with roasted veggies, mashed potatoes, or stuff into sliders with pickled onions and fresh herbs.
