  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 box (8.5 oz) Jiffy corn muffin mix (or any cornbread mix)
  • 1 cup shredded cheddar cheese (optional, for extra cheesiness)
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  • Preheat Oven:
    🌡️ Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish or a similar-sized casserole dish.

  • Mix Wet Ingredients:
    In a large bowl, whisk together the sour cream, melted butter, and eggs until smooth and well combined.

  • Add Corn and Dry Ingredients:
    Stir in the drained whole kernel corn, creamed corn, corn muffin mix, salt, and black pepper until fully incorporated. If using, fold in the shredded cheddar cheese.

  • Bake:
    Pour the mixture into the prepared baking dish and spread evenly. Bake uncovered for 45–50 minutes, or until the top is golden brown and the center is set. A toothpick inserted in the middle should come out clean.

  • Cool and Serve:
