Instructions
In a medium pot over medium-high heat, add olive oil and diced onion. Sauté for 3–5 minutes until soft and slightly browned.
Add minced garlic and all spices. Cook for another 30 seconds, stirring constantly.
Stir in tomato paste and cook for 2 more minutes. Be sure to scrape the bottom to prevent sticking.
Add chipotles, adobo sauce, fire-roasted tomatoes, vinegar, honey, cocoa powder, and salt. Mix well.
Lower heat and simmer for 10 minutes, stirring occasionally.
Remove from heat, let cool for 5 minutes, then blend until smooth using an immersion blender.
Transfer to a container. Let cool completely. Store in the fridge for up to 1 week or freeze in portions.
Notes
This paste is perfect for tacos, bowls, or stirred into soups. Customize the spice level by adjusting the amount of chipotle used.
